These mini cheesecakes made in the air fryer are creamy, lightly golden, and incredibly easy to prepare. Perfect for unexpected guests or family dinners.

Ingredients
  

Crust
  • 120 g crushed cookies (graham crackers or butter biscuits)
  • 45 g melted butter
  • 1 tsp sugar (optional) Add if cookies are not very sweet.
Filling
  • 250 g cream cheese (softened) Full fat recommended for best texture.
  • 60 g sugar
  • 1 pcs egg
  • 1 tsp vanilla
  • 1 tbsp lemon juice
  • 80 g sour cream or Greek yogurt
Optional Toppings
  • berries, jam, chocolate chips, cinnamon, or a spoon of caramel Use as desired.

Preparation
  1. Prep your pan. Use a silicone muffin mold or small metal muffin tin with paper liners. Lightly grease if not using liners.
  2. Make the crust. Mix cookie crumbs with melted butter (and sugar if needed). Spoon into cups and press down firmly.
  3. Mix the filling. Stir cream cheese and sugar until smooth. Add the egg and mix just until combined. Stir in vanilla, lemon juice, and sour cream.
  4. Fill. Spoon filling on top of the crust, about 3/4 full. Tap the pan lightly to pop big bubbles.
Cooking
  1. Preheat air fryer (if needed). Bake at 160°C for 10 to 13 minutes. Edges should look set, center should jiggle slightly.
  2. Cool properly. Let them sit at room temperature for 20 minutes, then refrigerate for at least 2 hours, preferably overnight.

Notes

Room temperature ingredients are crucial for a smooth mix. Do not overbake; look for set edges with a gentle wobble. Chill before adding toppings for a neater appearance. If serving guests, prepare them the night before.
